From Italy to Brampton: The Story Behind Amami Italia (Opening October 31, 2025)

Some stories start in a kitchen. Ours starts somewhere between a craving and a dream. If you’ve ever said, “I wish there was a proper Italian spot in Brampton,” this is it. On October 31, 2025, Amami Italia opens its doors, a place where dinner isn’t rushed, the bread comes out warm enough to tear apart by hand, and every dish feels like it’s been waiting for you.

What “Amami” Really Means

“Amami” means love me in Italian, two small words with a lot of heart. For us, it’s not marketing; it’s a mindset. It means cooking with patience, serving with care, and never letting a plate leave the kitchen unless it makes someone feel something. The recipes here aren’t any regular inventions; they’re memories brought back to life, slow-simmered ragù, pizza dough that rests for nearly a day, roasts rubbed with garlic and rosemary. The kind of food that doesn’t need explaining once it hits the table.

The Hands Behind the Kitchen

At the center of everything is Chef Gianluca, born and raised in the hills of Tuscany. His earliest memories are of Sunday mornings, his grandmother rolling dough, his father tending to a fire that smelled like oak and olive wood. Those rhythms never left him.

He talks about food the way most people talk about family.
Ask him what makes a perfect pasta and he’ll smile and say, “When it makes silence at the table.”

What guides his kitchen:

  • Respect the old ways. Recipes deserve space to breathe, not decoration for decoration’s sake.
  • Let time do the heavy lifting. Flavour doesn’t rush; it builds slowly, one stir, one flame at a time.
  • Hospitality first. The dish is only half of it. The rest is how it’s shared.

When Chef Gianluca landed in Canada, he carried two things: a notebook full of recipes and a deep belief that people still crave genuine cooking, the kind that tells a story without saying a word.

What You’ll Fall in Love With

Maybe it’s the handmade pasta, silky and warm, carrying sauce the way it should, not drowning, just holding.
Or maybe the wood-fired pizza, its crust puffed with air, edges blistered just enough to add that soft crunch.
There’s the porchetta, too, the crackle of the skin, the slow roast of the meat, the scent of fennel and rosemary filling the room.

And don’t skip the sides: herbed roast potatoes that seem simple until you taste them, crisp outside, soft inside, kissed with olive oil and sea salt. They never last long.

How We Actually Cook

No buzzwords, no shortcuts, just instinct and repetition. Every dish is touched by hand, tasted before it leaves the pass, adjusted until it feels right.

  • Technique that earns its place. Doughs hydrated to feel, not formula. Sauces finished when they smell done, not when a timer says so.
  • The fire that defines us. Our oven burns wood from Ontario’s fruit farms, it gives a light, aromatic smoke that clings softly to the crust.
  • Seasons as our compass. Tomatoes when they’re sweet, truffles when they’re bold, citrus when winter starts knocking.
  • Service that listens. A quick pour when your glass runs low, space when your conversation runs deep.

It’s the kind of cooking that looks easy until you try it. That’s how you know it’s honest.

The Room and the Feeling

Walk in and you’ll catch the glow first, amber light bouncing off gold accents and polished stone. Italian tiles underfoot, leather booths that make you exhale when you sit.
The music? Always a touch of jazz, a bit of Italian soul, never loud enough to interrupt.

There’s a reason people linger here. The space was designed to slow time, dinner that lasts a little longer, laughter that echoes a little louder, nights that stretch the way they should.

Why Brampton

We chose Mayfield Road not by chance but by feeling. It’s the edge of a growing community people from Caledon, Vaughan, and Toronto all cross GTA, bringing stories, accents, and curiosity.

We wanted Amami Italia to be part of that heartbeat, a place you find once, then start bringing people to. Not just the new restaurant in town, but the one that becomes your place.

Lounge Nights: When Dinner Refuses to End

Then there’s the shift. Plates clear, lights dip, and a low pulse fills the room. That’s when Amami Italia changes tempo.
Every Thursday, Friday, and Saturday from 9:30 PM to 2 AM, we host Lounge Nightspart music, part magic.

DJs spin a mix that feels more like conversation than playlist. The bar hums with shakers and laughter. Cocktails glow in candlelight, limoncello spritzes, espresso martinis, Italian classics done with personality.

It’s where dinner ends but the night begins, spontaneous, stylish, never scripted. You might plan to stay an hour and realize it’s been three. That’s the beauty of it.

Private Lounge Nights (Your Party, Your Way)

From Sunday through Wednesday, the lounge turns private, perfect for birthdays, proposals, or those nights when you want to celebrate without a crowd.
Chef Gianluca and the team will tailor the menu to your story, a few shared courses, maybe a favorite bottle, maybe a surprise dessert that says more than words.

Tell us what kind of night you’re dreaming of; we’ll build it quietly so you can just walk in and enjoy.

Before You Visit

Opening weekend will be lively, we can already feel it. Plan ahead if you want your favorite table, or drop in later and let us welcome you properly once the first rush passes.

Bring someone who loves food as much as you do. Share a plate, a story, maybe a little too much dessert. The rest will take care of itself.
